Greg and I love stuffed peppers, but I always feel like they are so complicated and messy to make. Boiling, stuffing, and then having to bake the peppers just takes so much time! That is why I make unstuffed peppers. I made this recipe up after I realized that we just cut our peppers up and mix it all together anyway. It is seriously the best, and we make it all the time! We even had it on Monday!
So, here it is!
Ingedients
Rice- I like brown and use the boil in a bag kind and use 2
Marinara Sauce- Newman’s Organic is my favorite
Ground meat- I usually go with ground turkey, but chicken or beef would work too
1 can of corn
1-2 pepper(s) chopped- to make it really easy you can buy the pre-chopped ones at the grocery store
Some chopped onion- you can also buy this pre-chopped and use as much as you like
Dash of extra virgin olive oil
Shredded Mozzarella
Recipe
- Boil water and add rice. Cook rice until soft and fluffy.
- While rice is boiling, brown your meat in a pan.
- Sautée your peppers and onion. You can also do this while your browning your meat.
- Once, steps 1-3 are done, combine rice, meat, peppers, and onion in a big pot. Add your corn and marinara sauce.
- Stir mixture on stove top to warm it all up together.
- Place in bowls and top with cheese.
Voila! Enjoy your yummy dinner with someone you love!
